A good friend introduced me to A Noodle Story at Amoy Street Food Centre recently, and I was blown away by the stall’s delicious noodles! Located on the first floor, this small stall is famous for its fusion noodles dish which seems to be a cross between Japanese Ramen and Chinese Wanton Mee; or as the owners call it, “Singapore-style Ramen”. Due to its popularity with office workers in the surrounding CBD area, there is always a long queue here during lunchtime on weekdays. I waited about 30 minutes when I went down on a Thursday afternoon, but it was well worth the wait!
A Noodle Story
A Noodle Story was launched in early 2013 by chefs Gwern and Ben. The duo underwent culinary training at Shatec and have worked at well-known restaurants such as Restaurant Andre, Iggy’s, St Pierre, and Waku Ghin. According to their Facebook profile, both of them share a strong passion for noodles. They were driven to create A Noodle Story after failing to find a good bowl of noodles in Singapore at an affordable price. After much relentless refinement to the recipe, they finally came up with the “ultimate noodles dish”, specially tailored to suit local taste buds.
The “Ultimate Noodles”
After waiting patiently for half an hour, I finally got my tantalizing bowl of medium-sized noodles ($9). I peeked into the stall while the chefs were preparing my bowl, and I could definitely sense their dedication to their craft. Other than having an efficient system of preparing the noodles within the kitchen, every single piece of ingredient is gingerly arranged by hand to achieve a pretty presentation. My exquisite bowl of noodles looked more like an expensive dish served in an atas restaurant.
I carried the dish back to my table, eager to check out the “ultimate noodles”. The first thing that caught my attention was the springy “wanton mee” noodles. It had great texture with just the right amount of bite. In fact, this was the best noodles I had eaten in a while! The noodles were complimented nicely by a savoury oily sauce and plenty of chopped shallots. Konbu (Japanese seaweed), dried prawns and sambal chili add additional layers of flavours to the dish. The result is an awesome localized taste which I enjoyed very much.
But the pièce de résistance was of course the tantalizing Japanese Char siu! I did some research and found that the owners import the pork belly from Spain, which are then marinated and cooked for 36 hours in a water bath. I LOVED the texture of the savoury char siu, which was so tender that it almost seemed to melt in my mouth.
There were other highlights in my wonderful culinary experience. The sumptuous dish also included a bowl of savoury miso soup, a juicy Japanese spring egg, a crunchy potato wrapped prawn fritter, and succulent dumplings. These added color and flavours to the dish.
Conclusion
I am glad to have discovered this awesome noodles stall (thanks to my friend of course). The two food artisans of A Noodle Story clearly have a very good understanding of ingredients and food preparation. Lucky for us, we can all enjoy their delicious and exquisite noodles at an affordable price. And not surprisingly, the stall has been awarded the Michelin Bib Gourmand 2017. I will definitely be returning to the stall soon.
